BB: Quick fixes never work! What are your favorite quick and healthy recipes?

F: (1) Simple Stir-fry: I don’t think it gets easier than brown rice in the rice cooker and a ton of fresh veggies in the wok! Dinner is served in 15 minutes.

           (2) Ratatouille over Polenta: Stew eggplant, tomatoes + other veggies of your               choice. Slice up a precooked polenta roll and bake for 10 minute. Serve veggies  atop.

          *Bonus: Both are vegan and gluten free!

 

J: (1) Mashed avocado on whole-wheat toast w/red chili flakes.

          (2) Tabbouleh made with quinoa, parsley, cucumbers, cherry tomatoes, lemon                    juice and olive oil.

          (3) Spaghetti Squash “Lasagna” made by layering spaghetti squash, sautéed                   peppers and onions, black olives, marinara sauce and topped with parmesan and parsley!
