My Favorite Vegan Cheese Sauce (Only 7 Ingredients)

There once was a time when I could eat an entire package, and I mean entire package, of Kraft Macaroni and cheese. Oh boy did I puff up like the Michelin star boy but it was worth it. I’d make it with butter, milk, the whole nine yards. It was one of my absolutely favorite comfort foods when I was a kid. I used to crave it once I started to eliminate dairy from my diet like my cat craves the nip. 

Finding and creating real good cheese based recipes was a struggle when I first started to experiment with a dairy free diet, but not any more! After learning how to make my own variation of vegan cheese sauce I’ve never had a single craving for cheese (cause now I know the shortcut). When trying to eat healthier, it really boils down to recipe swaps and finding foods and ingredients that will satisfy your cravings.

Once you can figure out how to create your favorite comfort foods, junk foods, desserts and everything *naughty* with healthy ingredients, I promise your world will change! You will never feel deprived again I say! So if you want to dip your toes into the world of recipe swaps then this vegan cheese sauce is your gateway drug. I mean food. Oh Cheese should be considered a drug who am I kidding. 

You can use this cheese sauce in spinach dip, mac n cheese, any “cheese” based pasta, on top of your fish or poultry, on top of your cauliflower or broccoli. Pretty much on everything. I could literally eat it on a spoon straight (and I do). So let’s get to it already shall we?

 

The Easiest Vegan Cheese Sauce

Ingredients (this makes a big batch that you can use throughout the week):

  • 2 cups of cashews
  • 1 package of silken tofu
  • 1 cup nutritional yeast
  • a dash of almond milk
  • 1 white onion
  • 1 tbsp apple cider vinegar
  • 3 garlic cloves

Directions:

  1. Soak the cashews in water for an hour or two
  2. In a food processor or blender, blend together the cashews (drained) and silken tofu until smooth
  3. Add the onion, garlic, and nutritional yeast and blend again until well mixed
  4. Add the apple cider vinegar and almond milk – blend for another 2-3 minutes
  5. Enjoy!

It’s literally like making a cheese smoothie. You don’t need to cook or heat or bake anything! Truly simple.

Now on the topic of tofu – you can make this recipe without tofu, but silken tofu does help it taste extra creamy. I will say that I use an organic brand and I don’t create recipes with this cheese sauce every day. I like to eat tofu in moderation since it can be known to interact (and not always in a good way) with your hormones. Just an FYI y’all!
