Health Benefits of Mint

The wonderful aroma of fresh mint, with its dark green, downy leaves, emits a cool and distinctive scent!  I was curious to know more about this minty, edible, remarkable plant.   I was happy to find that fresh mint, including peppermint, is a powerful antioxidant containing vitamins and minerals like Vitamins (A,C,B12), Folic Acid, Selenium, Potassium, Iron and more!  My readers know I’m a big fan of posting about antioxidants in fruits and veggies!  Fresh mint, especially peppermint, also helps aid digestion, relieve indigestion and freshen breath.
 
Recipe Ideas
 
Chocolate Sauce:  Add chopped mint leaves to melted coconut oil & dark unsweetened chocolate; sweeten with granulated monk fruit or stevia, to taste;

Mint Pesto Sauce: This is great to serve with lamb chops!   You can experiment and adjust to your own taste.
Your base will be 1/4 cup olive oil.  From there add lemon juice, fresh garlic, finely chopped mint and salt/pepper to taste; if it’s too thick, add more olive oil.
 
Salad Dressing:  This is a fast and super easy dressing for fruit!  Mix equal amounts of honey, lime juice and chopped mint.  
 
Virgin Mojito: Crush (muddle) 1/2 cup mint leaves, 1/4 cup basil leaves, juice of one lime and pinch of salt; add two cups of club soda;  sweeten to taste with your favorite sweetener (I use stevia or monk fruit). Fill each glass with lime wedges, ice and mojito mixture. Top off with a sprig of mint! 
 
Yogurt Dip:  Salt & pepper one small peeled and chopped cucumber;  add a cup of Greek yogurt; add to this a half cup of chopped mint leaves and voila! you have a fast and delicious dip to serve with your gluten free chips.
 
Fresh, chopped mint can be added to just about anything!  For added flavor, add to hummus, soups, meat marinades and especially hot cocoa!
