Cream of Broccoli Soup

Can you tell that I’m going through a soup phase? I mean, it’s pretty much 2 degrees here the past couple of weeks in Chicago, so anything that warms me up I’m consuming. I know that some  women don’t like making soup because they think it’s super time consuming, but rest assured the recipes I concoct take only 10 minutes to prep, and 15 minutes of cook time. 

Soup is also going through a diet fad right now with new “soup cleanses” popping up everywhere I go. I can personally say that I accidentally went on a soup cleanse once and didn’t even know it, that’s how much I love soup. But is it OK  for everyone to try? Well, just think about it, soup is extremely easy to digest just as with liquid, but you are actually getting fiber from your blended ingredients unlike with juice. Another difference may be that you could be significantly cutting down on your sugar by soupin’ up instead of juicin’ up. Lot’s of gals like to include apples & oranges and other high sugar fruits to their juices, but with soups, the focus is on the savory taste which means no fruit.

So, soup cleanse or not, I’m definitely adding more soup to my weekday meal plan. I typically indulge on the weekends (wine + restaurant food), and by the time Monday rolls around my tummy is just aching for something light and nourishing. A couple of weeks ago I shared a mung bean soup recipe, and this week I’m sharing my cream of broccoli recipe! Get your blenders out, ladies!

Cream of Broccoli Soup: Vegan + Gluten Free

This broccoli soup will be sure to satisfy your taste buds and warm up your stomach!
Ingredients
  • 1 whole yellow onion diced
  • 1 tbsp coconut oil
  • 3 cloves garlic
  • 2 lb broccoli chopped into flourets
  • 2 cups low sodium veggie broth
  • 1 cup nutritional yeast
  • 1/2 cup almond milk
  • 1/2 tsp Himalayan salt
  • juice from 1/2 a lemon
  • 1 cup water
  • pinch of: thyme, parsely, basil, chilli powder
Instructions
  1. In a soup pan, heat up the olive oil and simmer the diced onion and garlic until translucent
  2. Add the water and vegetable broth
  3. Stir in the broccoli
  4. Add the nutritional yeast, almond milk, salt and spices
  5. Simmer for about 15 minutes
  6. Turn off heat and let cool for about 3-4 minutes. Add to a food processor and blend the soup mixture
  7. Add lemon juice to the mixture, blend for about 1 more minute, then serve!
 

 Broccoli soup is bursting with nutrition and good for you enzymes and compounds. This article also states that the enzyme in broccoli could help prevent cancer! Broccoli is also packed with fiber, potassium, folate, Vitamin A & C, so eat up!
