Fool Proof Vegan Caesar Salad Dressing

This vegan Caesar salad dressing recipe is definitely fool proof!

I’ve been using cashews in so many vegan recipes within the past two years, it seems to be a superstar ingredient to anything dairy free. For example: my cashew milk recipe, pumpkin cheesecake, vegan zucchini dip, vegan spinach dip, and my dairy free peppermint squares

Now, I get to make one of my favorite salad dressings with cashews! Vegan Caesar dressing. I seriously can’t get enough of this dressing, and I’ve not only been using it in my salads, but also as a dip and soup topping. This Caesar dressing recipe is boasting magnesium which helps ease migraines, copper that contains antioxidants for heart health, a fabulous blend of B vitamins *from the nutritional yeast* that promotes energy, amino acids, phytonutrients, and yes, fiber! 

Lots of good packed into a dressing, no?! How could you ever go back to regular Caesar dressing after hearing all the benefits that are in this recipe. Even better is the fact that it only takes about 15 minutes to whip up. You can even make this in bulk to last you the whole week (and you can freeze the rest).

Vegan Caesar Salad Dressing

Indregients:

3/4 cup raw cashews soaked and drained
1/4 cup nutritional yeast
1/4 cup filtered water
2 tbsp Chia Seeds
1 whole lemon, squeezed
1 tbsp capers
1/4 cup Extra virgin olive oil

Directions:

In a blender, blend all ingredients together until smooth. If needed, add another 1/4 cup of water to thin out the dressing. 

Notes:

Now please note, if you don’t want your dressing super salty, you can put less than the recommended dose of capers. You can start out with less, taste test, then add more for your individual needs.
