Vegan, Gluten-Free and Delicious Ingredients: Savour This Sauce

BB:  What is your life like outside of making delicious sauces?

We both love reading.  We read for leisure and for work. We sometimes veg out in front of the T.V., but prefer remaining active.  As you can gather by the use of we, we actually spend a good deal of time together, even outside of making sauces.  But Michael enjoys doing things that are outdoorsy such as hiking and paddleboarding under that warm California sun.  Marlene enjoys dancing and cooking.

BB:  Have any quick recipes that readers can utilize at home?

 Yes! Mushroom and Onion Fajitas. You will need: 8 corn tortillas, 1 clove of grated garlic, 1 cup sliced mushrooms, 1 cup sliced red onions, 1 cup “sun-dried” oven-roasted grape tomatoes, white balsamic vinegar, olive oil, Thai chile cilantro dressing, salt and pepper to taste, and feta cheese (optional).

Cooking instructions:

pre-heat oven to 400F. Toss grape tomatoes wit holive oil, white balsamic vinegar, and salt and apepper. Line the sheet panw ith foil and spread tomatoes evenly. Roast tomatoes in oven until they have the appearance of sun-dried tomatoes, careful not to burn, then set aside. Coat saute pan with olive oil and bring to medium heat. Add onion and grated garlic and stir until tender. Add the mushrooms and more olive oil as needed. Season with salt and pepper, stirring until tender. Place mushrooms, onions and tomatoes in tortillas. Dress with the Thai chile cilantro dressing and top with feta cheese if desired!
