WATCH: Pumpkin Dip Trio

I stopped by Andrew Finnigan of  Finnigan’s Finds kitchen a while back to give him the scoop on pantry essentials he needs plus some awesome super easy pumpkin dip trios to make! 

I don’t know about you but when I’m having guests over I don’t want to slave in the kitchen all day, and worry about keeping my space meticulous all while having to entertain. There is nothing worse than being exhausted right as your guests arrived, so I’m always on the hunt to make entertaining recipes that are quick, easy, yet nutrient dense. 

First up: Pumpkin Black Bean Dip

Ingredients:

  • 1 can of pumpkin
  • 1 can of black beans
  • pinch of cumin
  • pinch or cayenne
  • 1 clove of garlic
  • juice of half a lemon

Directions:

  • Throw all ingredients in a blender, garnish with small scoop of beans, and serve

Pumpkin Greek Yogurt Coconut Dip

I like using this dip as a sweet dessert and I dip apples and pineapples in this one! You can also use this dip as a crepe filling. 

Ingredients

  • 1 can of pumpkin
  • 1 cup of Greek yogurt
  • 1/2 cup of unsweetened coconut flakes
  • 1 drop of stevia
  • pinch of pumpkin pie spice, cinnamon, and nutmeg
  • two drops of vanilla extract

Directions:

  • Blend all ingredients together,  sprinkle coconut on top for garnish, and serve

Pumpkin Hummus

Ingredients:

  • 1 can of pumpkin
  • 1/2 cup of tahini
  • 2 tbsp olive oil
  • 2 cloves of garlic
  • juice of half a lemon

Directions:

  • Blend all together, garnish with lemon slices, and serve!

 

How easy was that?! All three of these recipes takes about 15 minutes total to prepare, your guests will be happy and guess what, you won’t be tired from cookin’ in the kitchen all day! What are some of your easy entertaining recipes?
