BB: What does a typical healthy meal plan for a day look like to you?
I like to start my days with oatmeal and a big mug of green tea. I cook my oatmeal in almond milk and coconut milk, so it’s super creamy and sweet. I also add all sorts of seasonal fruits, nuts, and seeds. (Here’s a bit more info on oatmeal)
Lunch is often leftovers from the night before and a green salad. During the cooler months I like to heat up the leftovers and put them right on top of the salad. Leftovers might be lentils and veggies, or quinoa pasta with homemade pesto.
I do snack throughout the day. I usually reach for fruit, nuts, smoothies, veggie sticks, or a rice cake with almond butter. I also drink loads of herbal teas, water, and kombucha.
Dinner is all over the place! I am always having new ideas or testing recipes for my blog. I love making Middle Eastern inspired food (grains + veg + delicious sauces), big pots of curry, and anything involving roasted vegetables!
