Pumpkin is low in calories, but packs in tons of vitamins and antioxidants. It’s a great source of Vitamin A and C, which can help you get gorgeous and glowing skin to flaunt at all your holiday parties! Also, the dark chocolate contains essential minerals like magnesium, zinc, iron, potassium and many more. With all of these health benefits, dessert doesn’t get any more guilt free than this.
Vegan Holiday Brownies:
- 1 cup canned pumpkin
- 1/2 cup sugar or you can sub for Stevia or Maple Syrup for a sugar alternative
- 1/4 cup coconut oil, softened
- 3/4 cup all-purpose unbleached flour
- 1 tsp vanilla extract
- 1 tbsp cornstarch (or arrowroot)
- 1/4 cup dark cocoa powder
- 1/2 tsp salt
- 1/2 tsp baking soda
To start, heat your oven to 350 °F. Then combine the pumpkin, coconut oil, sugar and vanilla in a bowl and mix well. Next, measure out and combine the dry ingredients in a separate bowl. We recommending sifting the flour and cocoa powder together to avoid any clumps. Combine the wet and dry ingredients together, and bake for about 20 minutes. This time can vary, so make sure you keep an eye on them! We baked ours in muffin tins to create perfectly portioned treats! To finish, you can also add in extras like nuts and vegan chocolate chips! This recipe is pretty flexible, so you can spice it up however you like!
